Easy Slow Cooker Taco Soup
This easy slow cooker taco soup is hands down my favorite soup recipe. I make it about once every couple of weeks during Fall and Winter. It makes a lot, so we can easily get dinner and a couple of lunch servings out of one recipe, or I can freeze the leftovers for later.
It is such a relief to know you have soup in the crock pot and that dinner is just a matter of serving up what you have prepared!
This recipe is hearty, full of veggies, and just spicy enough for a little “kick”. The spices do get a little stronger each day that it sits in your refrigerator, which I enjoy. Even a novice cook could easily manage this recipe, the hardest part is browning the ground beef, easy peasy!
Ingredients:
1 and 1/2 pounds ground beef
1 cup chopped red or white onion
1 (1.25 ounce) package taco seasoning mix
1 (1 ounce) envelope Ranch style dressing mix
2 (15.25 ounce) cans whole kernel corn, undrained
1 (16 ounce) can pinto beans
1 (16 ounce) can black beans
2 (10 ounce) cans of whole kernel corn, undrained
2 (10 ounce) cans of Rotel or other tomatoes with green chiles, undrained
1 (12 ounce) can of light beer
1 and 1/2 cups of water
Toppings: shredded cheddar cheese, sour cream, tortilla chips, avocado slices, cilantro, etc.
We like to eat this with Fritos or a freshly baked skillet of cornbread!
Cook beef and onion in a large skillet over medium-high heat, stirring until meat crumbles and is no longer pink; drain.
Combine meat mixture, taco seasoning mix, and next 7 ingredients in a 5 1/2 quart slow cooker.
Cover and cook on low for 5 - 6 hours. Serve with desired toppings. Makes 16 cups.
